stuffed jalapeño popper dip


ingredients

2 - 8oz packages of Cream Cheese (room temp)
1  cup Shredded Mexican cheese
1 -4oz can of green chiles (do not drain)
1 - 4oz can of diced jalapeños (do not drain) Can be doubled for extra heat.
1/2 Parmesan cheese
1 cup mayonnaise

topping:
1 cup Panko breadcrumbs
1/2 cup Parmesan cheese
1/2 stick of butter (melted)

instructions

Mix the first 6 ingredients in a food processor until smooth.  Add to a greased 2qt casserole dish. In a separate bowl mix the melted butter, breadcrumbs and Parmesan cheese.  Sprinkle on top of casserole and bake in 375-degree oven for 20 minutes (Top should be golden brown).

Serve hot with Ritz crackers.
