asparagus tomato salsa
ingredients:
2-3 large ripe tomatoes, seeded and diced
1 small red onion, fine diced
1-2 jalapeno pepper, seeded and diced
1 bunch asparagus, chopped
2 limes, squeezed
½ cup chopped cilantro
1 tsp cumin
1 tsp oregano
Salt and pepper to taste
instrutions:
Clean and cut asparagus into 1 inch pieces. Boil for approx. 3-5 mins. Plunge into ice water to cool. Drain and chop. Mix all ingredients together and add seasonings. Allow to sit at least 1-hour to flavor. (can make the night before) Serve with grilled salmon.
Left over salsa can be served with whole grain tortilla chips.
