chicken broccoli salad with cranberries

This is from the May/June issue of Cooking with Paula Deen – actually Brendon picked it out.

ingredients:
3 chicken breasts (used chicken tenders to cut down on cooking time)

2 cups water
2 tbl soy sauce
2 cloves garlic minced
4 cups broccoli
1 red onion diced
1 cup crushed peanuts
1 cup dried cranberries
1 cup mayonnaise
3 tbl orange marmalade

instructions:
In a large skillet place chicken in single layer. Pour water and soy sauce over chicken and sprinkle w/ garlic. Cover and cook over med-high heat until cooked through. Remove from pan and cool. Cut into cubes. In large bowl combine chicken, broccoli, onion, peanuts, and cranberries. In small bowl whisk together mayo and marmalade. Pour chicken mixture.

Toss and cover and refrigerate for 4 hours.
