best ever meatloaf
We first tried this while visiting Adam and Mandy in Chicago.
Hands down it was the best ever meatloaf recipe we have ever had.
ingredients:
2 teaspoons vegetable oil
1 small yellow onion
¼ cup milk
1 cup soft bread crumbs
¾ cup ketchup, divided
4 teaspoons Worcestershire sauce, divided
1 pound ground chuck or round
8 oz ground pork sausage – I use sage flavored
1 egg, beaten
1 ¾ teaspoons Mrs. Dash (optional)
½ teaspoon garlic powder
instructions:
Preheat oven to 350 degrees.
Heat oil in skillet over medium-high heat. Add onions and sauté for 7-10 minutes or until tender. Transfer to mixing bowl.
Combine milk and bread crumbs in a separate bowl and then set aside.
Combine ¼ cup ketchup and 2 teaspoons of Worcestershire sauce in a separate bowl and then set aside.
Add ground chuck, remaining Worcestershire sauce and ketchup, sausage, egg, bread mixture, garlic and seasoning mix. Mix until just incorporate.
Mound meat loaf mixture in 9x9x3 inch loaf pan. Cook for 45 minutes. Remove from the oven and pour off grease. Spread the ketchup mixture. Return to the oven and bake for approximately 30 more minute - center temp should be 160 degrees.
Let stand for 15 minutes before serving. Enjoy with hashbrown casserole!
