carrot casserole

My Aunt Beth first discovered this recipe and we have enjoyed for many years. This is one of my absolute favorite dishes that we now have during the holidays like Easter or Thanksgiving. It’s not low cal but so worth it! When I serve this dish people try to figure the combination of cheese…they have no idea that it’s just Velveeta!

ingredients:
1 bag carrots, sliced and parboiled

1/2 lb. Velveeta cheese, cubed
1 stick butter
1/2 med. onion
1 cup Ritz crackers, crushed

instructions:

Saute onion in butter. Layer carrots and cheese in casserole. Pour onion and butter over this.
Top with Ritz crackers. Bake 350 for 35 minutes or until good and bubbly.
Double everything for larger casserole.
