chinese food | Dutch’s sweet and sour pork

ingredients:
1 lb pork loin cut into 1 inch cubes
2 tablespoons soy sauce
1 egg
1 tablespoon dry sherry
¼ teaspoon ground pepper
¼ teaspoon garlic powder

¼ cup cornstarch

Combine the above ingredients and add meat to coat.

Sauce
½ cup brown sugar
2 tablespoons cornstarch
¼ teaspoon ground ginger
Combine and stir in:
1 cup ketchup
2 tablespoons white vinegar
1 tablespoon soy sauce
Set aside for later use.

instructions:
1 green pepper, cut into strips
1 tomato, cut in wedges
2 cups carrots, sliced
1 medium onion, sliced
15 oz pineapple chucks, drain and reserve liquid
1 cup chicken broth

Combine pineapple juice with chicken broth to make 11/4 cups. Heat oil in wok, add meat and stir fry until cooked (2-3 mins). Remove from the wok. Add onion and sauté for 1 min, then stir in pineapple/chicken broth and carrots. Cover and simmer for 5 minutes. Stir in ketchup mixture into vegetable and simmer over medium heat until thicken and bubbly. Stir in meat, green pepper, tomato and pineapple chucks. Cover and simmer for 5 more minutes.

Serve over brown rice.
