mandarin orange tossed salad

Happy Easter! This salad is light and refreshing addition for Easter brunch.
This wonderful recipe is from Linda Verner.

ingredients:
1 head leaf lettuce
3 stalks celery, thinly sliced
4 green onions, sliced
1 11-oz can mandarin oranges
Vinaigrette dressing
Caramelized almonds

Combine first 4 ingredients in a salad bowl. Cover and chill up to 3 hours. Toss with vinaigrette dressing. Sprinkle with caramelized almonds.

Vinaigrette dressing

¼ cup vegetable oil
2 T sugar
1 T white vinegar
½ t salt
¼ t pepper
5 drops hot sauce

Combine all ingredients and chill. Yield 1/3 cup

Caramelized almonds
¼ cup slivered almonds
2 T sugar
Combine ingredients in a heavy saucepan, cook over medium heat, stirring constantly, until golden. Pour onto wax paper and cool. Break into pieces.
