italian cheese strata | aunt connie bara
Here’s another cheese appetizer – I guess I love cheese! Brendon’s aunt Connie brings this to family holiday events and it is always a hit. Since the marinade of full of colors it has a great presentation!
ingredients:
1 – 8oz. White Cheddar Cheese
1 – 8oz. Cream Cheese
1 – 8oz. Pepper Monterrey Jack Cheese
1/2 cup olive oil
1/2 cup white wine vinegar
1 teaspoon salt
1 teaspoon fresh ground pepper
3 tablespoons cilantro, chopped
3 tablespoons parsley, chopped
3 green onions, minced
1 teaspoon sugar
½ jar roasted red peppers, drained and diced
instructions:
Wisk oil, vinegar, spices, herbs and peppers together. Cut blocks of cheese lengthwise. Cut into ¼ “ slices.
Alternate slices and arrange in a Pyrex dish. Pour marinade over cheese and marinate overnight. Just before serving, transfer cheese to serving platter. Garnish with part of the marinade and a few additional roasted red peppers.
Serve with assorted crackers. Enjoy!
