grilled pork loin with raspberry chipotle

This is a recipe from my dad – his own creation. Quite tasty. Note this makes a lot, so plan on leftovers.

ingredients:
3.5 lb pork loin - not tenderloin
sauerkraut
Stubbs Pork Marinade
raspberry chipotle paste (We made our own by using 1 bottle of seedless raspberry All Fruit and 1 tsp ground chipotle pepper. Add more pepper to taste if you prefer it spicier.)
string, soaked in water

instructions:
Cut loin in half and marinate both halves together for 5 hours in Stubbs Pork Marinade. Slit each half along the length about 1 " deep. Fill each slit with sauerkraut. Paste each side with a raspberry chipotle paste. Next, carefully tie sides together. Grill over low-med heat for 1.5 hours until done rotating as needed. Rest, cut with electric knife, enjoy!
Pinot Noir or nice chardonnay also holds up to Merlot.
Leftovers made great sandwiches!
