spinach salad | warm bacon dressing

ingredients:
¼ cup brown sugar
1 tablespoon red wine vinegar
2 teaspoons water
½ cup mayonnaise
4 bacon slices, crisp-cooked and crumbled
1 egg, hard boiled and chopped
¼ cup parmesan cheese, grated
½ fresh mushrooms, sliced
6 cups baby spinach

instructions:

Prepare bacon dressing. In a bowl, combine brown sugar, brown sugar, water, and mayonnaise. Stir in bacon. Cover and chill.


To plate, spinach, mushrooms, chopped eggs, and cheese. Cover and chill until serving time. Just before serving, heat dressing mixture over low heat in a small saucepan. Dressing is ready when it is heated through and becomes a golden brown. Spoon dressing over salads.

This is currently my top salad! I tend to like mine heavy on the bacon, egg, and mushrooms. Go figure...
